Bakery Production Manager
About the Role
Lucky Lab Coffee Co. is seeking an experienced Bakery Production Manager to help lead the daily operations of our growing commissary kitchen and bakery. Working alongside the Commissary Kitchen & Bakery Director, this role serves as the bakery production leader, ensuring our pastries, baked goods, and desserts are produced with exceptional quality, consistency, and care.
This is a hands-on leadership position requiring active participation in daily production while leading the bakery team, maintaining production standards, and ensuring every product reflects the quality and hospitality Lucky Lab is known for.
As Lucky Lab continues to grow — with a new commissary kitchen, additional cafe locations, and an expanding catering program — this role offers the opportunity to help shape and scale our bakery program from the ground up.

Leadership & Team Development
• Lead and support the daily bakery production team during assigned shifts
• Assist with hiring, onboarding, training, and coaching bakery team members
• Build a positive, accountable, and high-performing kitchen culture
• Lead by example while maintaining high standards for quality, efficiency, and professionalism
• Hold team members accountable to production schedules, quality standards, and food safety procedures
• Foster a culture aligned with Lucky Lab Coffee Co.'s values and commitment to excellence
Bakery Production & Quality
• Lead daily pastry, bakery, and dessert production for all retail cafés and catering operations
• Participate directly in production, baking, decorating, packaging, and fulfillment
• Serve as the bakery subject matter expert, ensuring recipes and products are executed consistently across every batch
• Coach team members on baking techniques, product finishing, presentation, and quality standards
• Ensure production goals and deadlines are met while maintaining exceptional product quality
• Maintain organization, cleanliness, and food safety standards throughout the commissary
Operations & Inventory Management
• Assist with production planning and daily workflow organization
• Monitor inventory levels and communicate purchasing needs
• Help manage food cost, waste, and production efficiency
• Support vendor relationships and inventory organization
• Assist in developing and maintaining standard operating procedures that improve consistency and efficiency
• Ensure equipment is clean, maintained, and operating properly
Menu Development & Innovation
• Partner with the Commissary Kitchen & Bakery Director to refine bakery recipes and improve existing products
• Assist with seasonal menu development and new bakery offerings
• Help elevate the overall quality, presentation, and consistency of Lucky Lab's bakery program
• Contribute ideas that improve both the guest experience and operational efficiency
Schedule Expectations
• This full-time leadership position primarily supports afternoon and evening production shifts. A typical shift is 10 hours.
• Weekends are required and holidays and peak production periods is expected
• This is a hands-on role requiring active participation in daily bakery production
• Responsibilities may evolve as the commissary kitchen and food program continue to grow
Qualifications
• 4+ years of bakery or pastry production experience in a commercial bakery, commissary, café, or restaurant environment
• Previous leadership or supervisory experience preferred
• Strong knowledge of baking techniques, pastry production, food safety, and quality standards
• Excellent organizational and time management skills
• Ability to lead a team while actively participating in production
• Passion for developing people, producing exceptional products, and building efficient systems
• Ability to lift up to 50 pounds and remain on your feet throughout a production shift
Compensation & Benefits
• Salary: $54,000–$58,000 annually, based on experience
